Pete's American Style Protein Pancakes
It's Pancake Day, which means it's time to go wild in the kitchen and make a mess.
For those health conscious people out there, or those people who have tried and failed at the Protein Pancake, here is a simple to follow recipe to create the big fat chunky American styled Protein Pancakes.
Ingrediants
30g of Protein poweder - I have gone for Bulk Powders Vanilla Whey (1 scoop)
2 eggs
30g of porridge oats
1/2 tsp of gluten free baking powder
Coconut Oil for coating of pan.
Peanut Butter for topping - I have gone for Meridian Smooth Peanut butter
Directions
1: Place your 30g of Protein, 30g of porridge oats, 1/2tsp of baking powder & 2 eggs into a blender cup - I personally use the Nutribullet.
2: Give it a good blast in a mixer, until your mix is creamy smooth.
3: Place a pan on a low heat and place into the pan a small amount of coconut oil - I use a small egg pan to help create the thick pancake. Tesco sell them for about £4.
4: The mix should make 3-4 pancakes, so divide evenly into the pan, so that the base of the pan covered. They will rise!!! make sure you give them a flip over, until golden on both sides.
5: Stack your Pancakes with a layer of peanut butter to create the triple stacked peanut butter protein pancake.
Approx 40g of PROTEIN!!!
